Khandsari is a traditional form of unrefined raw white sugar, bringing the natural sweetness of sugarcane to your table. It is a healthier and more nutritious choice compared to refined sugar, preserving the inherent benefits of sugarcane.

Making Process:

Fresh juice from non-GMO sugarcane is extracted using a traditional Kolhu machine. This cold-pressed method leaves behind bagasse, which is later used as fuel for cooking the sugar.

The sugarcane juice is boiled in cast iron open pans on a firewood stove. This open cooking method makes khandsari unique, enhancing its yogic nature and making it ideal for Ayurvedic preparations with Tridosha balancing properties.

The juice is further boiled and thickened, requiring skilled craftsmanship to stop at the perfect moment. This stage is crucial for determining the quality, texture, and taste of the khandsari sugar.

When the juice reaches the state of liquid jaggery, it is transferred to a crystallizer pan and left for 1-2 days to form sugar crystals. Rotating fins speed up the crystallization process.

The thickened liquid jaggery undergoes a centrifugal process to separate the molasses and extract the khandsari crystals. This step ensures the purity and quality of the crystals.

The khandsari crystals are cleaned, sun-dried, sieved, and manually processed before being packed in food-grade packaging. This labor-intensive process ensures a high-quality, artisanal product.
